Pork Caldereta

I have known that our younger brother (who’s away from home) was asking our mother the ingredients of some certain Filipino dishes; I want to share this menu not only for him to know but for all of my guests and visitors as well...

Ingredients:

1/3 kg pork with bones (spare ribs), cut into serving pieces
1/2 head garlic, chopped
1/3 cup tomato sauce
salt and pepper for seasoning
1 small can liver spread
2 medium size potatoes, cut into wedges
1 medium size red/green bell pepper, cut into wedges
1/2 cup onion stalk

Cooking Directions:

In a large saucepan, boil pork in enough water to cover meat for 30 to 45 minutes with garlic, tomato sauce, salt and pepper.

Now, add liver spread and potatoes and simmer for 3 to 5 minutes. At this point the meat should be tender and the potatoes cooked through. If you need more water or time to do this, go right ahead.

When the pork and potatoes are cooked through add bell pepper and onion stalk. Cook this way for 2 to 3 minutes. Serve hot with rice and enjoy. =)
